Vegan Chocolate Chickpea Flapjacks

We've done it. We've created the ultimate work from home snack...Vegan Chocolate Chickpea Flapjacks! 🍫🍌

Delicious dark chocolate, crunchy chickpeas, chewy golden syrup coated oats and sweet banana. Name a better combo, we'll wait...💭

Packed full of protein and fibre from the chickpeas, these flapjacks will be sure to keep your hunger at bay while you're working from home, or they make the perfect re-fuel snack post-workout 💪

The banana adds a few of those extra vitamins and minerals all our bodies need at this time of year and we made sure to coat them in lovely dark chocolate and our Dark Chocolate Roasted Chickpeas - just because we think everything tastes amazing when its coated in chocolate 😍

 

Emma's Dark Chocolate Chickpea & Banana Flapjacks 
(Makes 12)

Ingredients:

  •  350g Rolled oats
  • 2 tbsp Chickpea flour
  • 100g BRAVE Dark Chocolate Roasted Chickpeas (get them here!)
  • 150g Raisins
  • 1 Banana, mashed
  • 200g Vegan Butter
  • 170g Golden Syrup
  • 150g Light brown sugar

To decorate:

  • 100g Vegan dark chocolate
  • BRAVE Dark Chocolate Roasted Chickpeas to decorate

Method:

  1. Preheat the oven to 160 Fan/180C
  2. Grease a 20x20cm tin with vegan butter and lightly dust with flour
  3. In a bowl, combine the oats, chickpea flour, raisins and banana
  4. In a saucepan, melt the butter, golden syrup and light brown sugar until all the sugar has dissolved
  5. Add the butter mixture to the bowl and combine well. Leave to cool a little before adding the Chocolate Chickpeas, mix to combine (but don't over mix!)
  6. Line the baking tray with the mixture and flatten the top
  7. Bake in the oven for 25-30 minutes until golden brown (depending on your oven)
  8. Remove from the oven and place on a cooling rack
  9. Leave to cool, then slice into 12 pieces
  10. Fill a saucepan with 5cm of boiling water and place a glass bowl on top (A Bain-Marie). Melt the chocolate over the bowl, stirring constantly with a spoon
  11. Using a dessert spoon, drizzle the chocolate over the top of the flapjacks and decorate with BRAVE Dark Chocolate Roasted Chickpeas
