BBQ Cauliflower Chickpea 'Wings'

BBQ Cauliflower 'Wings' coated in crunchy Chickpeas...GENIUS!😍
We've coated cauliflower in a chickpea crumb, for extra crunch, protein and fibre 💪 You then dip these crunchy cauliflower 'Wings' the sweet, tangy BBQ sauce made with pomegranate molasses for ultimate snack while watching the Euros this weekend!😋
All we can say is this: Buckle up because this recipe is literally going to knock your socks off🧦
Cauliflower ‘Wings’
1 head cauliflower, cut into medium-sized florets
140g cup chickpea flour
40g plain flour
60ml cup oat milk
180ml water
2x 110g BRAVE Sea Roasted Chickpeas sharing bags
1 tsp garlic powder
1 tsp onion powder
1/4 tsp salt
BBQ Sauce
2 tbsp dark soy sauce
2 tbsp tomato ketchup
2 tbsp pomegranate molasses
2.5 tsp agave nectar
1 tbsp sunflower oil
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 clove garlic, crushed
1/4 tsp ground black pepper
1/4 tsp smoked paprika
1/4 teaspoon sea salt
Method:
Pre-heat your oven to 180C and line a baking sheet with baking parchment
Crush your chickpeas (we did ours in a pestle and mortar, but a freezer bag and rolling pin will work just fine).
In a large bowl, mix your crushed chickpeas with half garlic and onion powders
In another large bowl, whisk together your chickpea flour, plain flour, oat milk water, salt and remaining garlic and onion powders.
Using one hand, coat each piece of cauliflower in the batter, shake off the excess, then move it to the crushed chickpea mixture bowl. Switching to your clean hand, coat your battered cauliflower in the chickpea mixture (this stops your hands getting coated in chickpeas!)
Place the chickpea crumbed cauliflower on your baking sheet and repeat with the remaining cauliflower.
Bake the cauliflower in the oven for 24 minutes, flipping the pieces after 12 minutes.
While the cauliflower bakes, make the BBQ Sauce. Mix all the ingredients in a bowl, then transfer to a saucepan. Cook on a medium heat until bubbling and thickened slightly. Remove from the heat and transfer to a serving dish.
When the cauliflower ‘Wings’ are golden brown, remove them from the oven, place on a serving dish and enjoy with the BBQ sauce.
