Choc Chickpea Oat Cookies
Why when we put oats in a recipe do we automatically feel like we could have it for breakfast? Well these plant-based Choc Chickpea Cookies are no exception ⬇️

They're gooey, melt in the middle, packed full of vegan chocolate & studded with crunchy, protein rich chickpeas 🤤

Honestly, what's not to love about these cookies? We can't answer that, either🤷
Ingredients
(Makes 12)
3 Tbsp Aquafaba (chickpea water)
75g Flour
25g Chickpea flour
1/2 tsp Cinnamon
1/2 tsp Baking soda
1/2 Tsp Salt
220g Butter
50g Caster sugar
100g Light brown sugar
1 Tsp Vanilla extract
1/2 Tbsp Maple syrup
120g Rolled oats
50g BRAVE Dark Chocolate Chickpeas
200g Vegan Chocolate chips
Method
  1. Whisk your aquafaba in a clean bowl
  2. In a separate bowl, cream together your butter and sugars using a hand whisk. Add in your aquafaba, vanilla extract and maple syrup and combine
  3. Add your flour, baking powder, salt and cinnamon and mix well
  4. Add your oats, Dark chocolate chickpeas and chocolate chips and combine well until you get the perfect cookie dough consistency
  5. On two lined baking sheets, measure out the dough into 12 cookies in balls. Put them in the fridge for around 1 hour
  6. Preheat your oven to 170C (Fan).
  7. Place 6 of the cookies onto another lined baking sheet.
  8. Bake your cookies for 12-16 minutes (depending on how chewy you like them)
  9. Remove the cookies from the oven and let them cool for 5 minutes on the baking sheet. Then transfer the cookies to a wire rack to continue cooling
