Choc Chickpea Oat Cookies
Why when we put oats in a recipe do we automatically feel like we could have it for breakfast? Well these plant-based Choc Chickpea Cookies are no exception ā¬ļø

Ingredients
(Makes 12)
3 Tbsp Aquafaba (chickpea water)
75g Flour
25g Chickpea flour
1/2 tsp Cinnamon
1/2 tsp Baking soda
1/2 Tsp Salt220g Butter
50g Caster sugar
100g Light brown sugar
1 Tsp Vanilla extract
1/2 Tbsp Maple syrup
120g Rolled oats
50gĀ BRAVE Dark Chocolate Chickpeas
200g Vegan Chocolate chips
Method
- Whisk your aquafaba in a clean bowl
- In a separate bowl, cream together your butter and sugars using a hand whisk.Ā Add in your aquafaba, vanilla extract and maple syrup andĀ combine
- Add your flour, baking powder, salt and cinnamon and mix well
- Add your oats, Dark chocolate chickpeas and chocolate chips and combine well until you get the perfect cookie dough consistency
- On two lined baking sheets, measure out the dough into 12 cookies in balls. Put them in the fridgeĀ for aroundĀ 1 hour
- Preheat your oven to 170C (Fan).
- Place 6 of the cookies onto another lined baking sheet.
- Bake your cookies for 12-16 minutes (depending on how chewy you like them)
- Remove the cookies from the oven and let them cool for 5 minutes on the baking sheet. Then transfer the cookies to a wire rack to continue cooling
