This super easy Chickpea Focaccia is a tasty twist on the classic Italian bread, with extra chickpea flour to give you a protein boost! 💪
Dip it in balsamic and olive oil, dip it in your soup, slice it and make the ultimate focaccia sarnie. The possibilities are endless...😍
375g Strong white bread flour
125g Chickpea flour
400ml warm water
7g Instant yeast
2tbsp Olive Oil (And extra to drizzle)
170g Cherry tomatoes, halved
1 red onion, sliced
3 cloves garlic, sliced
For the drizzle:
BRAVE Sea Salt Chickpeas
2tbsp water (to desired thickness)
Squeeze of Agave nectar
Flaked sea salt to top
Place your bread and chickpea flours in a large bowl. On one side of the bowl add the salt and the other add the yeast, making sure you keep them separate.
Make a well in the flour and add your warm water and olive oil, mix everything together then tip out onto a clean, well-floured surface
Knead the dough until it becomes soft (5-10 mins). Place it in a lightly oiled bowl and cover with a tea towel for 1 hour or until it has doubled in size.
While the dough proves, fry your onions, sliced cherry tomatoes and garlic until softened. Put to one side.
When the dough has doubled in size, remove it from a bowl and place it in an oiled rectangular tin (25x35cm). Stretch your dough to the edges of the tin and press dimples in the doughs surface using your fingers.
Sprinkle the tomato, onion and tomato on the bread, drizzle with olive oil and a sprinkle of the flaked sea salt.
Leave to rise for another 20 minutes.
Heat your oven to 220C/200C fan. Place the focaccia on the middle shelf and bake for 20 minutes, until golden brown.
While the bread bakes, make your tahini balsamic drizzle by whisking together the tahini, balsamic vinegar, water and a squeeze of agave nectar.
Once the bread it baked, remove from the oven and place on a wooden chopping board. Drizzle over the balsamic tahini dressing, sprinkle with BRAVE Sea Salt Roasted Chickpeas and enjoy!
