Vegan Black Bean Burritos

These Burritos are stuffed with all the good stuff: Crunchy Chickpea Rice, spicy Black Beans, topped with Avocado, spicy JalapeƱos and a squeeze of fresh lime šŸŒ¶ļøšŸ„‘


Ingredients (Makes 4)

1 Cloves Garlic
1/2Ā Chilli flakes
1/2 Tsp Cumin
1/2 Tsp Smoked paprika
200g Black beans (drained)
150g Chopped Tomatoes
1 Tbsp Tomato puree
150g Rice
Juice of 1/2 lime
1/4 Red onion, finely diced
50g Bag BRAVE Sweet Chilli Chickpeas
4 Tortilla wraps
JalapeƱos
1 Avocado, sliced
Lettuce (finely chopped)
Bunch coriander

Method

  1. Cook yourĀ rice according to the packet instructions
  2. In a frying pan heat some oil and add your garlic clove and spices
  3. Add your black beans, chopped tomatoes, tomato puree and finely chopped coriander stalks. Cook for 10 minutes, thenĀ stir through your finely chopped coriander and season with black pepper and salt. Stir through your corianderĀ 
  4. Drain your rice and stir through the red onion, BRAVE Sweet Chilli Chickpeas and Lime juice to taste. Season with salt and pepper
  5. Place a wrap on a chopping board and load it up with your Chickpea rice and black bean sauce (be careful not to over fill!). Top it with some finely chopped coriander, lettuce, a few slices ofĀ avocado and some jalapeƱos.
  6. To wrapĀ the Burrito, tuckĀ in the sides and rollĀ one side over the other, making sure all the filling stays inside.
  7. Enjoy!
