Vegan Black Bean Burritos

These Burritos are stuffed with all the good stuff: Crunchy Chickpea Rice, spicy Black Beans, topped with Avocado, spicy Jalapeños and a squeeze of fresh lime 🌶️🥑


Ingredients (Makes 4)

1 Cloves Garlic
1/2 Chilli flakes
1/2 Tsp Cumin
1/2 Tsp Smoked paprika
200g Black beans (drained)
150g Chopped Tomatoes
1 Tbsp Tomato puree
150g Rice
Juice of 1/2 lime
1/4 Red onion, finely diced
50g Bag BRAVE Sweet Chilli Chickpeas
4 Tortilla wraps
Jalapeños
1 Avocado, sliced
Lettuce (finely chopped)
Bunch coriander

Method

  1. Cook your rice according to the packet instructions
  2. In a frying pan heat some oil and add your garlic clove and spices
  3. Add your black beans, chopped tomatoes, tomato puree and finely chopped coriander stalks. Cook for 10 minutes, then stir through your finely chopped coriander and season with black pepper and salt. Stir through your coriander 
  4. Drain your rice and stir through the red onion, BRAVE Sweet Chilli Chickpeas and Lime juice to taste. Season with salt and pepper
  5. Place a wrap on a chopping board and load it up with your Chickpea rice and black bean sauce (be careful not to over fill!). Top it with some finely chopped coriander, lettuce, a few slices of avocado and some jalapeños.
  6. To wrap the Burrito, tuck in the sides and roll one side over the other, making sure all the filling stays inside.
  7. Enjoy!
