Plant-based Chickpea Mac & Cheese

This might sound cheesy, but we think this Plant-based Chickpea Mac & Cheese recipe is really grate 🧀

📸 Picture this: A baking dish filled to the brim with macaroni, mingling perfectly with a creamy chickpea 'cheese' sauce, topped with our sensationally crunchy Sweet Chilli Roasted Chickpeas 🌶️

This dish is packed with protein and fibre from head to toe 🌱 What's not to love? 😋

Ingredients
(Serves 4)

  • 300g Macaroni pasta
  • 250g Drained chickpeas (reserve liquid)
  • 150ml Veggie stock
  • 15g Nutritional yeast
  • Juice 1/2 Lemon
  • 1/2 tbsp miso paste
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp turmeric
  • 1/4 tsp chilli flakes
  • Salt & pepper
  • Chickpea water (Aquafaba)
  • 100g BRAVE Sweet Chilli Chickpeas
  • Handful parsley

Method

  1. Preheat your oven to 180c fan
  2. Boil your pasta in a pan according to the packed instructions
  3. In a blender, combine the chickpeas, veggie stock, nutritional yeas, lemon juice, miso paste, garlic powder, onion powder, paprika, turmeric, chilli flakes. Add the chickpea water (aquafaba) until you reach your desired consistency
  4. Once your pasta is cooked, add your 'cheese' sauce to the pan and combine well. Pour into a baking dish
  5. Crush your chickpeas and combine in a bowl with the chopped parsley and use them to top your macaroni cheese
  6. Bake in the oven for 20 minutes, or until golden brown
  7. Enjoy!
