Plant-based Chickpea Mac & Cheese
This might sound cheesy, but we think this Plant-based Chickpea Mac & Cheese recipe is really grate 🧀

Ingredients
(Serves 4)
- 300g Macaroni pasta
- 250g Drained chickpeas (reserve liquid)
- 150ml Veggie stock
- 15g Nutritional yeast
- Juice 1/2 Lemon
- 1/2 tbsp miso paste
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp turmeric
- 1/4 tsp chilli flakes
- Salt & pepper
- Chickpea water (Aquafaba)
- 100g BRAVE Sweet Chilli Chickpeas
- Handful parsley
Method
- Preheat your oven to 180c fan
- Boil your pasta in a pan according to the packed instructions
- In a blender, combine the chickpeas, veggie stock, nutritional yeas, lemon juice, miso paste, garlic powder, onion powder, paprika, turmeric, chilli flakes. Add the chickpea water (aquafaba) until you reach your desired consistency
- Once your pasta is cooked, add your 'cheese' sauce to the pan and combine well. Pour into a baking dish
- Crush your chickpeas and combine in a bowl with the chopped parsley and use them to top your macaroni cheese
- Bake in the oven for 20 minutes, or until golden brown
